200ml newly squeezed lemon juice
500g fine sugar

150ml peach liqueur
200ml citrus syrup (see above)
A few cranberries, for garnish

For the Cordial: Place all the components inside a saucepan, bring to a simmer, mixing to dissolve. Then, take off the heat and let it to cool fully. Pour to a clean bottle, close it and refrigerate it in the fridge, where it will keep for up to a month.

To make Batch Mix: Combine all the spirits and syrup in a big jug, allow it to infuse for an hour, then pass it through preferably using muslin, so it's fully clarified.

To serve: Add 85ml of the premix into your mixing glass packed with ice, and stir lightly for about 60 seconds to chill. Strain into a chilled martini glass or a similar vessel, top with some cranberries and finish with a quick spritz of the essential oil above the glass.
